No-bake Cashew Butter Granola Bars

Ingredients
  

  • 2 cups quick oats 
  • 1 cup crisp rice cereal
  • 1/3 cup unsweetened shredded coconut 
  • 1/3 cup flaxseed meal 
  • 2 Tbsp chia seeds
  • 1 cup Real Cashew butter 
  • 1/3 cup honey or maple syrup 
  • 2 Tbsp coconut oil, melted 
  • 2 tsp pure vanilla extract
  • 1-2 Tbsp water

Instructions
 

  • Mix together oats, krispies, coconut, flaxseed, & chia seeds until combined. Add remaining ingredients (except water) & stir. If needed, add 1 tablespoon of water at a time until the dough sticks together easily.
  • Line 9×9 pan with parchment paper, leaving some overhang on the edges. Transfer the dough to the pan & press firmly & evenly.
  • Place the pan in freezer for at least 30 minutes to set.
  • Once set, remove the bars from the freezer & lift them out of the pan using the parchment paper. Place them flat on parchment paper.
  • Melt the chocolate & drizzle it evenly over the bars. Let harden. Using a sharp knife, cut the bars into rectangles. Serve & enjoy!
