No-bake Cashew Butter Granola Bars

- 2 cups quick oats
- 1 cup crisp rice cereal
- 1/3 cup unsweetened shredded coconut
- 1/3 cup flaxseed meal
- 2 Tbsp chia seeds
- 1 cup Real Cashew butter
- 1/3 cup honey or maple syrup
- 2 Tbsp coconut oil, melted
- 2 tsp pure vanilla extract
- 1-2 Tbsp water
Mix together oats, krispies, coconut, flaxseed, & chia seeds until combined. Add remaining ingredients (except water) & stir. If needed, add 1 tablespoon of water at a time until the dough sticks together easily.
Line 9×9 pan with parchment paper, leaving some overhang on the edges. Transfer the dough to the pan & press firmly & evenly.
Place the pan in freezer for at least 30 minutes to set.
Once set, remove the bars from the freezer & lift them out of the pan using the parchment paper. Place them flat on parchment paper.
Melt the chocolate & drizzle it evenly over the bars. Let harden. Using a sharp knife, cut the bars into rectangles. Serve & enjoy!
